Menu Plan Monday

I can't wait until we go to our Basic Life Skills class! Cameron's diet is a little strict right now, 1900 calories and 1 unit of insulin per 15 grams of carbs. Can anyone recommend a good diabetic cook book or healthy protein snacks? Here's what I've got cooking this week.

Sunday ~ Spaghetti w/ Salad

Monday ~ Chili

Tuesday ~ Crunchy Parmesan Chicken Tenders, Baked Potato w/ sour cream & chives, Veggie

Wednesday ~ Thanksgiving Part Deux, Turkey, Mashed Potatoes, Stuffing, Corn, & Rolls

Thursday ~ Turkey Soup

Friday ~ Grilled Cheese & Soup

Saturday ~ Leftovers

Breakfasts: Cheerios w/ Fruit, Pancakes, Waffles, Eggs, Sausage, Bagel, English Muffin, Cereal

Lunches: Turkey w/ Provolone Wraps, PB&J, Roast Beef w/ Swiss, Leftovers

Cameron's snacks: Carrots w/ Ranch, Salad, Hard Boiled Egg, String Cheese, Celery w/ Peanut Butter, Sugar Free Jell-o
