Tuesday ~ Farfalle w/ Tomato Basil Sauce, Salad, Rosemary Olive Oil bread

Wednesday ~ Eat a Pita Pizza

Thursday ~ Out to dinner (Peyton's 6 month & Dylan's 3 year old pictures

Friday ~ Easy Cheesy Enchiladas, Spanish Rice, Salad

Breakfasts: Cereal, Waffles, Bagels, Eggs & Sausage, Pancakes, Yogurt, & Fruit

Lunches: PB&J, Salad, Pastrami & Swiss on Onion Roll, Left over Pita Pizza's, Veggies w/ Ranch, Fruit Salad

If I've said it once...

I'll say it again! The next American Idol...

David Cook!

If Archuleta wins, it will be a GREAT disappointment. I am NOT disputing that he can sing, because that 17-year-old has some serious talent. Simon Cowell stated early on that Cook had the stuff American Idol is about. Cook sings, arranges, his vocal range is amazing, and let's face it ladies, he is EASY on the eyes, alright! Archuleta has amazing talent, but COME ON! He's a crooner! His songs are all the same. Even my husband said, "Once he attempts to do something different, I'll pay attention to him." He doesn't show the range and ability that Cook does. Cook wiped the floor with him tonight and Cowell kept crowning Archuleta. WHAT? I feel like in the end Simon didn't stand behind what American Idol is about, and ordinarily I agree with him. He's blunt, however he usually hits the nail right on the head. Tonight he was out in left field. You want talent? You want range? You want arrangement? You want progression? Cook's your man!

Menu Plan Monday



I forgot to post my Menu Plan Monday last week. It was a weird week and my menu was very small. We did quick, easy meals. I have a few nights of those this week as well. However, Friday night's dinner, DELISH! It is probably my favorite recipe of all time!

Sunday ~ Tacos

Monday ~ Spaghetti with meat, marinara sauce, garlic buns

Tuesday ~ Grilled Cheese & Chicken Noodle Soup

Wednesday ~ Quesadillas w/ Guacamole, Salsa, & Sour Cream

Thursday ~ Leftover's

Friday ~ Baked Penne with Roasted Vegetables, Salad, Garlic Rolls

Saturday ~ Out to dinner

Breakfasts: Cereal, Waffles, Bagels, Eggs & Sausage, Yogurt, & Fruit

Pretty Peyton

She had her 6 month well baby visit today. She is healthy as ever, weighing in at 19 pounds and 7 ounces. She is 26 1/2 inches tall. She got her routine vaccines, which meant 3 separate shots. YUCK! When I asked about getting her ears pierced, the doctor suggested I do them on the same day as shots. Viola! Off to the mall we went. The ladies who pierced her ears also suggested getting them done on the same day as the shots because she's got her Tylenol and she more wiped out from the vaccines. I made Mike hold her, since he made me go to her appointment by myself, but also because I take better pictures! She was NONE to thrilled to be sitting there, plus she hates EVERYBODY except for the 4 other people who live in her house. The most anti-social baby I have ever seen. Although, seriously, have you met her daddy? Okay, anyway, so the girls adjust the marking a couple of times, have I mentioned my pretty Peyton has 2 different ears? One is mine and one is her dad's. Hubby calls her "Nemo". The girls make their marks and the piercing commences. SCREAM! She screamed worse with her ears than her shots. Just 5 minutes later she was back to all smiles. She looks so much different with her little earrings in. AMAZING! I can't wait to change them to the cutest little daisy studs I found. I take it back, I can wait. Let's just get through the next 2 months without any setbacks.

Spring Reading Thing 2008: Halfway Point

When I checked in on Katrina over at Callapidder Days today, I was shocked to learn that we are at the halfway point of our Spring Reading Thing 2008. Utter horror set in. I have finished only one book! I'm reading a few, doing the day by day of The Purpose Driven Life and just started the week by week of The Busy Mom's Devotional, now realizing I won't be done for a whole year as it's a 52 week read. I must tell you how hard it has been to get into A New Earth, oh my gosh. I have started that book and reread chapter 1 at least 7 times. I was so darn frustrated I threw it at Hubby and asked him to read the first chapter. When he was done he was just as discombobulated as I was. I have tossed it on a shelf and if time permits I'll go back to it. I just don't understand what all the brouhaha was about it. I'm so disappointed because Oprah bubbled over about this book and I fall asleep whenever I pick it up. YUCK! The one book I have finished is Night by Elie Wiesel. This was another Oprah recommended, and she had Elie Wiesel on her show visiting Auschwitz for the first time since he was a teenager. This book is remarkable! It's a 120 page read of a young boy who survived Auschwitz, but lost his parents and younger sister. The terror he endured and nightmarish images etched in his memory should serve as a reminder to all of the evil still alive in this world. We cannot forget such atrocities, as history has a terrible way of repeating itself. I highly recommend this read.

6 months & 4 days

Peyton is growing so fast! Why do they do that? She is like a sponge, she learns something new daily. She learned to hate baby cereal, none of my kids liked it, and let's face it, would you eat it? She learned to roll over, both ways. She learned to squeal at her brother's for attention. She learned to pull Mama's glasses off her face. She learned that by batting her eyes she'll get whatever she wants from Daddy. She has her 6 month check-up, and consequently immunizations, on Thursday. I HATE IT! I am, however, looking forward to seeing what she's weighing in at. She is in 6-12 months clothes, pushing more the 12 months. I am almost done with her birth announcements. I know what you're thinking, "She's 6 months old!" You are correct, but she was born on the 1st of November, so everyone got a picture of her in their Christmas card. I thought this would give me plenty of time to make her announcements and send a 6 month picture instead. We may even have her ears pierced by then. I waffle on the idea. I'm just not sure about it. No teeth yet, but I can see the white on the bottom. We're also going to begin transitioning her into her own room! YEA! We bought an outstanding baby monitor that not only monitor's sound, but movement. The Angelcare Movement Sensor and Sound Monitor is the best peace of mind I have ever purchased! Once her crib is moved I'll post pictures of her adorable nursery.

Menu Plan Monday

I know I gushed over Laura a.k.a. I'm an Organizing Junkie not too long ago. This is my first time posting to her Menu Plan Monday. I plan my meals for the following week on Friday and grocery shop on Sunday. I may go back once during the week for special ingredients that I hate to see go to waste in the fridge waiting for Thursday to roll around or for extra fruits and veggies. I detest red meat, so my meals include lots of chicken, turkey, shrimp, etc. I do not deprive Hubby and the kids from the red meat, on those nights I'll either grab a Subway Veggie Delight or make something separate for me. Hubby is currently gone Monday and Tuesday nights, so you will see how I don't cook much for me and the boys. Saturday's are church nights, which is usually our eating out night. Without further ado, here is my menu plan for the week.

Sunday ~ Spaghetti with meat/marinara sauce, salad, garlic buns (made from left over hamburger buns)

Monday ~ Grilled Cheese & Chicken Noodle Soup

Tuesday ~ Pita Pizza

Wednesday ~ Cinco de Mayo celebrate with Turkey Fajitas

Thursday ~ Chicken, Baked Potatoes, Roasted Veggies

Friday ~ Blueberry Pancakes, Hash browns, Eggs, Sausage, Bacon, Toast

Saturday ~ Out to dinner

Breakfasts: Cereal, Bagels, Waffles, Fruit, Yogurt

Lunches: PB&J, Turkey w/ Provolone & Avocado & Tomato, Veggies w/ Ranch, Strawberries, Cantaloupe, Honey Dew, Watermelon, Fruit, Yogurt, Salads
